The great thing about hops is that there are hundreds of smart people trying to cultivate new hop varieties with wonderful characteristics. Surprisingly, a breeding program with a long history yet no viable commercial hop from that program quietly released their first hop in November 2018 to a few breweries who immediately embraced it. While there is yet to be a Unicorn Hop, Strata as it became to be known for the 2019 harvest was New Age (dank), Southern Tier (tropical), and even floral without some of the onion, garlic and diesel characteristics other single hops or hop blends like this tended to produce. The only way for us to introduce a hop that we like and see if our fans agree that it is wonderful, is to brew a straight-forward modern IPA. Stratasaurus Rex IPA has a deep gold color with a white fluffy head. It is highly aromatic featuring passion fruit, melon, mango, and fresh berry. Along with this comes a dank herbal note of drifting sweet (whisper the word) cannabis. We crafted this IPA with a soft yet firm bitterness, light bready malt, and five hop additions in the kettle before we double dry hopped it.
