Cologne is the largest city in the Westphalia region of western Germany. Just as Düsseldorf is the home of Altbier, nearby Cologne is the home of a clear, golden cousin—Kölsch. By 1603, the city council demanded all brewers of Kölsch swear to follow the old method of using top-fermenting (ale) yeast rather than the bottom-fermenting (lager) yeast that Bavarian brewers were starting to favor. Our BBC Kölsch used German Pilsner and Vienna malts, Perle hops, and even went so far as to use an authentic yeast from a Cologne brewery. We warm-fermented it then cold conditioned it as the brewers who follow the Kölsch Konvention still do. We added 60 pounds of fresh cucumber slices to add a layer of melon aroma and flavor to the floral hops and crisp biscuity malt. The result is a delicate and complex while light and refreshing beer, perfect for quenching your thirst on a hot summer day.
