The Belgian Pale Ale is already a strange duck in its native country because Pale Ale in Belgium doesn’t use spices, sugars, or even dry hopping. The pepper, coriander, apple and pear are the yeast talking to you, and when General Mayhem is speaking, you listen. The malty richness is a byproduct of bulking this monster up to 9% ABV.
