The Craft Beer Movement was fueled by a spirit of innovation and a search for ways to create new flavors. The currently named “Cold IPA” is brewed differently around the country and is highly dependent on the traditions of the brewery making it. There really isn’t a distinct boundary when a beer ceases being an IPA and transitions to a Cold IPA or even an IPL (India Pale Lager), so we just brewed it and will let you decide if it’s as tasty as we think it is. Our concept for this beer was to create a clean, light malt canvas with pilsner malt, corn, and rice. We used a clean lager yeast to let the hops shine with little interference. The bittering is kept low so as not to hurt the drinkability. We late-hopped with Azacca, then whirlpooled in Motueka and Mosaic hops for maximum flavor and aroma. We weren’t finished yet though. We waited until after the beer had lagered a bit, then cold dry-hopped with Pekko, Azacca, and Mosaic at near freezing temperatures. Marshland is clean, and crisp yet subtly fruity exclusively from hops. It is not a so-called “Hop Bomb”. Marshland is more about easy drinking and enjoying more than one Cold IPA in an evening.
