Düsseldorf is the ancient home of Altbier, a smooth copper-colored ale that predated all of the famous German lager beers. The brewers’ of Altstadt (old town section of Düsseldorf) would occasionally brew a stronger Sticke (Secret) Altbier that would only be given to members of the Brewers’ Guild. The fun of brewing at StillFire has always been sharing our unique creations with our loyal customers. We could have simply taken our wonderful Altbier, Slippery When Wet, brewed it a little stronger, and checked that item off the Efficiency App on our Androids. The third German beer in our 2020 Oktoberfest series needed to be extra special and no secret. What could be more German than German Chocolate Cake? Chocolate, caramel, coconut and pecan from the cake all pair well with the German Pilsner, Munich, Vienna and Carafa malt in our Sticke. The next sound you hear will be your head exploding. American baker Samuel German in the 1850’s developed a type of sweet baker’s chocolate that ended up being named in his honor. A century later in 1957, Mrs. George Clay published her recipe for German’s Chocolate Cake in the Dallas Morning News Recipe of the Day. The possessive was dropped as the recipe was published around the country as simply German Chocolate…….Cake. So nothing could be more American than the craft brewers’ of StillFire pairing cake flavors with a lesser known German beer style to accentuate the caramel and chocolate already there and bring a light coconut and pecan complexity to the experience.
