We wanted to crank up both the tropical fruit levels and the complexity of our new Hazy DIPA: The Phantasm Menace. We used Pilsner malt, flaked oats and white wheat in the mash, five different hops in the boil as well as five hops in the fermenter. All of these hops (Citra, Vic Secret, Enigma, Nelson Sauvin and Ella) are known for their thiols, the class of compounds that we perceive as tropical fruits. We fermented Menace with a yeast known to enhance thiols then took it one more step further by adding the once secret thiol booster made from grape skins called Phantasm. The result is a delightfully delicious hazy tropical IPA that boasts loads of citrus, passion fruit, guava and even a touch of Sauvignon grapes.
